Takeda Gyoto is an all-purpose chefs knife. The blade measures to approximately 240mm. Each Takeda is hand-cut, thus slight variations in length may occur. The traditional Japanese handles are rosewood and octagonal in shape.
Takeda has produced hand-forged blades from high-quality carbon steel Aogami Super Steel (AS) for three generations. Aogami Super Steel (AS) possesses a high percentage of carbon and chrome contributing to its hardness, edge retention, and corrosion resistance. Each blade holds 50/50 edges.
